Crabmeat with Lemon

Crabmeat doesn't have much taste. Therefore, it is best to mix it with some greens to help to bring out its flavour. Do not serve this with anything heavy as it will drown the fresh crabmeat taste. Enjoy.

Ingredients:
  • 1 lb fresh crabmeat
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons fresh Italian parsley, minced
  • 1 (5 ounce) package mixed greens
  • 1/4 cup extra virgin olive oil
Directions:
  1. In a large bowl, mix the ingredients and then season with salt and black pepper.
  2. Separately, also in another large bowl, toss the greens with 1/4 cup olive oil and season to taste with salt.
  3. Divide the greens and mound the crab mixture onto the greens and serve with crusty rolls and chilled sparkling wine.
