Baked Fish with Herbs and Soy Sauce

Baked fish is quite popular in hawker centres. The sauces are prepared earlier and it is mixed with the fish upon order. Thereafter, the foil is sealed and the whole thing is placed in an oven to cook. This recipe is also good for barbecue. I hope you enjoy this recipe as much as I do.

Ingredients:
  • 1 lb tilapia fillet
  • lemon
  • 1 -2 clove garlic, sliced paper thin
  • 1 medium vidalia onion, sliced paper thin
  • 1/2 cup chopped herbs (basil or parsley or combination)
  • 1 (1 lb) bag baby spinach leaves
  • 1 cup freshly grated parmesan cheese
  • vinaigrette
  • 1/2 cup dry white wine or 1/2 cup chicken broth
  • 3 tablespoons soy sauce
  • 3 tablespoons canola oil
  • 3 tablespoons rice vinegar
  • salt and pepper
Directions:
  1. Firstly, preheat the oven to 400 degrees.
  2. Mix the ingredients and spread it all over the fish.
  3. Cook the fish in the oven for about 20 minutes. Once ready, serve it with rice.
